Preparation:
1․ Soak the mash in water for 6 hours. Transfer to a saucepan and fill with clean water. After boiling, simmer for 30-40 minutes until soft. Discard on a sieve and cool.

2․ Cut the leeks into rings, the cherry tomatoes into quarters and the avocado pulp into small pieces.

3․ Mix the mash, onion, tomatoes, avocado and salad mix. Season with salt and pepper. Drizzle with lime juice.
